Southern Lemon Sole is a right-eyed flounder native to the sheltered estuaries, tidal harbours, and coastal waters of New Zealand. It thrives over sandy and muddy seabeds, typically at depths reaching up to around 385 metres. The fish grows to lengths of roughly 25–50 centimetres, giving fillets that are a practical size for both commercial and home kitchens. Its flesh is notably delicate and fine-textured, with a pale white colour that holds beautifully when cooked. These qualities make it exceptionally well suited to gentle cooking methods such as baking or pan-frying, where its subtle flavour and tender flakes are best preserved.
